Cinnamon is made from the inner bark of trees from the genus Cinnamomum and can be used in both sweet as well as savory dishes. Cinnamon is produced in Sri Lanka and parts of the Indian Malabar coast, with Sri Lanka being the largest producer in the world. Cinnamon is used in a variety of ways, including in pies, doughnuts, candies, hot cocoa, and in making masalas or spice mixes.
